Chef Pai's Tea Journey

Tea has been my passion since moving to China in 2010, a this love for tea has taken me across continents and cultures. Each cup tells a story, and I'm excited to share mine with you at Sloth & Fox Cafe.

China opened my eyes to the depth and breadth of tea culture. Living, studying and working there, I was constantly amazed by how tea was woven into the fabric of daily life. From the precise rituals of gongfu tea ceremonies to the ubiquitous thermos of green tea carried by locals, I saw firsthand how tea could be both a humble daily drink and an art form.

My curiosity about tea led me on a global adventure to Sri Lanka, where I walked through lush tea plantations, the mist clinging to the hills as I learned about the art of tea cultivation and processing. The dedication of the tea pluckers and the rich history of Ceylon tea left an indelible mark on my heart.

Japan taught me about the pursuit of perfection in simplicity. The meticulous care in preparing matcha, the tranquillity of a tea house, and the seasonal appreciation of tea helped me understand tea as a meditative practice.

My time working, studying and living in Australia, increased my love affair with tea as an intergal part of loving times spent with family. I have fond memories of afternoon tea with my Aussie family – the gentle clink of china, the aroma of freshly baked cakes, and the warmth of laughter filling the air. These moments were more than just about drinking tea; they were about connection, love, and the simple joy of being together.

My time in Thailand introduced me to the vibrant world of iced teas. The sweet, creamy Thai iced tea became a symbol of Bangkok's bustling streets for me, while the delicate floral notes of butterfly pea flower tea showed me how tea could be both a feast for the eyes and the palate.

I'm thrilled to bring these experiences together at Sloth & Fox Cafe. Our iced tea menu is a reflection of my journey, a fusion of traditions and innovations inspired by the cultures that have shaped my love for tea. Each of these drinks is a little piece of my journey, and I hope they'll transport you to the tea fields, markets, and cafes that have inspired me along the way.
